Funny enough I'm also the kind of person that prefers having a crispy steak too. I know it's rather hard to get something like that both tender and crispy, but when made right its like pure heaven to my mouth.

I'm the opposite, I like my steak as close to raw as legally possible. What I'll do is buy a chuck roast, chop it up into chunks, fry them for a few minutes to kill off the majority of germs, and serve. It's perfect for me. Incredibly rare, but not full out raw.

I've had rare before even as early as that and I can taste the appeal, a dry streak can be hard to chew. However, the flavor of rare just doesn't punch me as incredibly as my style.

What I do, is cut it super thin. Before I cook a spread lime pepper and onion power on the steak and on the pan. When cooking I let it soak in the steak's grease(no drain at all) while the pan is completely covered until the final step. I cook completely on the stovetop with the cover on medium heat until just around medium-rare before kicking it up to the highest temp for a quick flash fry up until I see brown the black marks and the inside is well done.

Sure it takes longer, but I always attempt to have it on Sundays and today I tried it with an angus ribeye and damn the flavor is still stuck in my mouth five hours later

Sounds pretty good. The only thing I like to add to season my steaks is a dash of seasoning salt and it's perfect. The nice thing about me getting the chuck roasts is that I love steak fat and chuck roast has tons of fat. The little amount of time I cook my steak still is enough to crisp up the outside of the fat so I get a good amount of crisp with more fatty goodness.
