Don't we already have mail in ballots. Isn't that what absentee ballots are?

Yes, but that's intended for people who *can't* physically make it to the voting polls. Elderly that can't get out, military stationed overseas, in-patients at hospitals, etc. Also, anyone can request an absentee ballot for any reason at all.
However, absentee ballots are the most vulnerable to method of voting to cases of fraud because there's no means to verify a voter's identity as being a legally valid voter. In the history of voter fraud cases, a high majority involved ways to cheat with absentee ballots.
Right now, there are Democrats (from Dem-heavy states) who are pushing to make mail-in voting the *only* method to vote; they say that it's due to the Covid-19 pandemic but not only is it in decline right now (with still 6 months before the General Election), but it's also a virus that has an overall 99.9% survival rate.
Overall, it's best to vote in-person if it's at all possible & leave absentee ballots to those who can't do so.
