The way I look at it is hey, I could have much more expensive hobbies, and yes the fact that you can eat good BBQ vs. a hamburger from McD's just makes it a no-brainer. You like the reverse sear thing, try this as it's one of my favorites. Get a good thick cut pork chop, bone in of course, and hit it with a good honey BBQ rub (or just your favorite rub). I have Meat Church's honey rub on hand and it's very good. Smoke the chops, same method as the steaks till about 10 degrees before you like it and then move it to the grill with an extra drizzle of honey over the top. It'll caramelize like candy while searing, and the smoky flavor hits really well with it. You mentioned sous vide, I don't have a SV unit but would like to try it sometime. You ever watch Guga on YT?
