I think "junk food" is too broad a category...I could not stop at one thing I consider to be junk food. For chips, Doritos might be #1. Nacho Cheesier. Also love potato chips. The jalapeño kettle chips from Jimmy John's are the best. Pringles are also great. So are cheetos. The crunch kind. And that is just chips. I am a huge foodie....and it doesn't stop at "refined palate" type foods. I'm gonna go grill a prime ribeye now. Found a ton of morels this year, so gonna cook some up now...along with some ramps that were harvested from my land. I raised a huge stand of ramps on my land. If you harvest them sustainably, you will never run out.

Wife got me a good ribeye the other night for my birthday, salt/pepper/garlic to season then seared the crap out of it at about 650F, finished it in a pan on the grill with butter and rosemary... perfection.

Theres a huge ramp festival in NC every year, been meaning to go sometime as I love them if done right.

Nice! Sounds similar to what I did with mine last night, but my sear was acquired by red hot lump charcoal...the only charcoal that can reach 650F. Two to three minutes on each side with fresh rosemary salt and pepper...finished I n cast iron in the oven. Never been to a ramp festival, but have heard of them.

Did you sear on grates or right on the coals? I've always wanted to try that. I cheated and used my propane grill, it'll get up to about 700F but I didnt feel like waiting that long. My favorite method is a reverse sear with my smoker. Smoke the steak for about 45 mins at 250F till it's about 10F from where you want it to end up, then sear and serve. The rosemary just sits on top of the steak while smoking to infuse the flavor, and if you want to boost it and go for extra decadent then serve with a pat of compound herb butter after searing.

Nice man! You know your shit, to be sure. I have never cooked directly on coals, but have heard of it. Have done reverse sear with smoker first. Reverse sear with sous vide is nice too. Always have compound butter in my fridge. I have ramps compound butter right now. It is phenomenal. Have spent many many hours tending to smokers. It's a great hobby.

Haha, thanks! Yeah I've been smoking since I was like 10yo or something, helping my dad and then couldn't wait to buy my own smoker after I got a place on my own, been hard at it ever since although having a kid now has slowed down my free time to do it. Very rewarding hobby. Ramp butter huh? Because why the heck not...sounds damn delicious.

Yeah having kids will do that. Smoking meats (kinda sounds weird) is a great hobby. Very rewarding. Seems expensive, but the thing is, we humans have to eat to live...so you can write off the cost of what you'd normally eat during whatever time period the smoked meat lasts for...and you'd have a not-so-expensive hobby. I'm sure you've thought of this. People like to justify why they do things that seem overzealous or excessive.

The way I look at it is hey, I could have much more expensive hobbies, and yes the fact that you can eat good BBQ vs. a hamburger from McD's just makes it a no-brainer. You like the reverse sear thing, try this as it's one of my favorites. Get a good thick cut pork chop, bone in of course, and hit it with a good honey BBQ rub (or just your favorite rub). I have Meat Church's honey rub on hand and it's very good. Smoke the chops, same method as the steaks till about 10 degrees before you like it and then move it to the grill with an extra drizzle of honey over the top. It'll caramelize like candy while searing, and the smoky flavor hits really well with it. You mentioned sous vide, I don't have a SV unit but would like to try it sometime. You ever watch Guga on YT? Dude knows his stuff...

I love a thick cut, bone-in Berkshire pork chop!! I'm talking 3.5" to 4". Berkshire is sofa king good. Fat melts and tastes like butter. I will try that method/recipe this summer and let you know how it turns out!

I have not. I don't watch a lot of YouTube and don't listed to podcasts. I do all my research via books, magazines, and text-only internet sources...i.e. not video content...not audio content.

Hard to choose, that's a big category. I prefer salty over sweet though, for chips and stuff I like good ole' tortilla chips with salsa. For crackers and stuff it's hard to beat Cheez-its. I will say that I have a guilty pleasure of getting the buffalo mozzerella sticks at QT gas stations, those things are both addictive and really bad for you, so I guess that qualifies as junk food right? The fact that they come off of a gas station roller grill should add extra points for danger, lol.
