Only fish I've ever done was a piece of salmon for my wife, I dont do seafood but she does so made some for her. Also have done shrimp, which is surprisingly good. Got ribs and shoulders down pat, chicken is pretty easy, brisket is challenging but I'm decent with it. Sausage is easy. My current favorite thing to smoke is reverse seared steaks and chops, takes about 45 mins and so delicious...
