What they mean is that trees won't move aside for you when you approach them on your skies with high speed, so you gotta able able to ski yourself AROUND them if you don't wanna break any bones (or worse), so the sign is smarter than you initially think.
And yes, many skiers are so overconfident they can't be warned enough about these obvious facts.
