Unless there's a sad backstory Jiren hasn't seen, the versions of someone will act the same as other versions of them. Bulma and Future Bulma have the same personality, it's safe to assume that Bulma from our timeline is hiding her feelings.

Trunks and Future Trunks were destined to be the same person, but the small things that happen as they grow or what might have happened in the past may have an effect on what they grow up to be/do. Like how Gohan trained Trunks. None of this kind of thing has been suggested with Bulma so maybe one bully or reject from when she was in school affected how she acts around Gohan.
