My sister in law makes fried giblets that's actually pretty good, lots of African spices.

My mom uses the giblets and neck of the Turkey to make gravy. I cheat and buy the gravy packets where you just add water, lol

Ah, yea holiday pay is a good incentive to work when you have the option. I'm sure its easier when you're single. My husband always seems to work on the holidays, he used to be away for a month at a time on the oil rigs. Now he works for Amazon and this is their busy season. They aren't even allowed to call in sick till January, lol

He only works at Amazon but is actually an engineer contracted by another company. He maintains and programs all the shipping equipment.

Yes oil rigs are dangerous and because of that pay a hefty amount. He only left because he hardly saw us. The company he worked for had a very high standard for safety. Anyone breaking a rule was fired on the spot. He saw it a few times.
