We don't. Just like on account of me being adopted and having no record of my birth my parents chose a birthday for me and that's the day we celebrate.

She was blessed mainly because of her Immaculate Conception - this means she was born without original sin (which is fitting as she is not only the mother of Jesus but the Queen of heaven)
