Adam didn't know any better, so why blame him?

He did know better because God told him so, I have no idea where you got that "he didn't know better" from. God had provided so much for him and Eve, and they didn't know good and evil, so there was no reason to think God was lying or mistaken.

No, that would be a moral judgment that he was not capable of until after he ate the fruit.

Which moral judgement are you referring to? Adam (and Eve because she also knew the warning and made the wrong choice too) knew better because they'd been instructed not to and of the consequences. Even though they didn't know good and evil, they knew "yes and no" or "do and don't", which aren't moral judgments.

"knew better" <- Moral judgment. The snake instructed them to eat the apple, which you ignored, and they had no way to make a judgment of which of the two positions t listen to. They couldn't even get punishment is bad, because that is also a moral judgment.

They knew better because they were informed and still had a choice. As I said they still knew "yes and no" and "do and don't". They knew who God is and what He'd done for them, so there was precedent to follow God's lead. God said don't and gave reasons, the snake denounced what God said and they made the wrong choice.

God told them the right choice to make and what would happen if they didn't do so then let them make the choice of their own free will. To say otherwise sounds like trying to shift responsibility and blame. Do you blame God for evil? If so, why?

One said do, one said don't. Choosing between to determine which is right is a moral choice. And I blame the snake for taking advantage of those that didn't know right from wrong.

I agree that the snake shares part of the blame and that yes the snake took advantage of people. The difference is what Adam and Eve knew of God - who He is, what He said and why, I don't know how well they knew the snake, I do know they knew more of God and who God is and what He did put His word over that of the snake and still had the ability to make a choice themselves; thus they are also to blame.
