it's really easy to make it healthy if you un-"americanize" it and cut back on the starches. stir fry is really easy to make, and you can have tons of vegetables and healthy proteins without a lot of bad fat. the only thing to be careful about is sodium, as most recipes are going to have soy sauce in them. getting the low sodium variety helps, but there's still tons of it in there. need some starch? cook some brown rice and serve the stir fry over it. there are lots of recipes out there, check it out.
