Kind of stupid that you have to tell them the pickles should actually be on the friggin sandwich!

not really, some people are allergic to the stuff it takes to make pickles

they can touch them just not eat them, so probably a practical joke or a friend, or both, and some people like pickles alone, that's probably why they do that, also just in case there's to much pickle.
