Seriously, I do not think their is any Real Difference, Today... (thanks to Industrialization, and brand Identity)
However Back in the Germanic lands where 'Wurst' (of assorted type) originated, there was likely a Recipe variant (spices used, girth/length of the 'tube', how the Meat is ground, etc) that one would have noticed when traveling to different regions
