Desert planets wouldn't be able to generate breathable atmospheres. The fumes of Mustafar would have overwhelemed Anakin and Kenobi even if the heat didn't ignite their clothing. The same civilization that developed lightspeed travel and incredible destructive weapons never thought of guardrails next to miles deep chasms.
There is one species, can't remember the name, but apparently their planet is the only one with higher gravity, so they have extremely developed legs and can jump far in "normal" gravity
Hell, if there was no watter at the bottom of the ocean, and you went there, you'd be crushed from the weight of air. Our "living zone" is stupid small.
All of the planets in Star Wars have the same gravitational force. According to what we know about planets now, this is more than likely never going to be the case.
