It almost has to be staged, because there is obviously at a third person (or more) there specifically to video it from various angles (and pretty close up too)... The angle at the very end is perfectly framed for the 'fall' --- in which the bike rider clearly lets go of handlebars, and points his arms right down into the trash bucket (where there probably was padding I would then assume -- not one bottle, can, or piece of paper comes out of the bucket)....
