So why would we have workers every other day

Because that's the easiest, most efficient way to keep the economy running, apparently. It used to be 14 hours a day with only Sundays off, but we now also get Saturdays off, and the standard work day has been cut down from 14 hours a day to only 8, giving workers more freedom to have a life outside of work.
