German Chocolate Cake
(Makes one 9-inch layer cake)

Ingredients

Cake

1/2 cup boiling water 4 ounces German sweet chocolate (such as Baker’s brand), chopped 1 cup buttermilk 2 cups all-purpose flour 1 teaspoon baking soda 1/2 teaspoon salt 1 cup (2 sticks) unsalted butter, softened 2 cups granulated sugar 4 large eggs, separated 1 teaspoon vanilla extract

Coconut-Pecan Frosting

1 cup evaporated milk 1 cup granulated sugar 3 egg yolks, lightly beaten 1/2 cup (1 stick) unsalted butter 1 teaspoon vanilla extract 1 1/3 cups sweetened shredded coconut 1 cup chopped pecans

Instructions

Preheat the oven to 350°F (175°C). Grease and flour three 9-inch round cake pans, or line them with parchment paper circles.

Pour the boiling water over the chopped chocolate in a small bowl and stir until the chocolate is completely melted and smooth. Let it cool slightly.

In another bowl, whisk together the flour, baking soda, and salt. Set aside.

In a large bowl, beat the butter and sugar together with an electric mixer until light and fluffy, about 3 minutes.

Add the egg yolks one at a time, beating after each addition. Mix in the melted chocolate and vanilla.

Add the flour mixture alternately with the buttermilk, beginning and ending with the flour. Mix just until smooth.

In a separate clean bowl, beat the egg whites until stiff peaks form. Gently fold them into the batter until no streaks remain.

Divide the batter evenly among the prepared pans and smooth the tops. Bake for 25 to 30 minutes, or until a toothpick inserted in the center comes out clean.

Cool the cakes in the pans for 10 minutes, then remove them to wire racks to cool completely.

To make the frosting, combine the evaporated milk, sugar, egg yolks, butter, and vanilla in a saucepan over medium heat. Cook, stirring constantly, until thickened — about 10 to 12 minutes.

Remove from heat and stir in the coconut and pecans. Let the frosting cool to room temperature before using.

To assemble, place one cake layer on a serving plate and spread about one-third of the frosting over the top. Add the second layer and repeat, then finish with the third layer and the remaining frosting on top.

Storage
Cover the cake loosely and store at room temperature for up to 2 days, or refrigerate for up to 5 days. Bring to room temperature before serving.
