My smaller project for this age was a strip mine. Nothing too fancy, I used acacia logs to mark the entrance and dug until I hit deepslate.
The larger project was a watchtower, with a furnace room at the front. I haven’t fully fleshed out the interior yet, but it provides a good view of the surrounding area.
