Ok here's some advice: When Undyne turns your soul red, go to Mercy, select Flee, and run away from her, she'll catch up, but just keep doing it until you get away

It takes about three or four attempts in total to flee completely,

Undyne is “determined”. The fight would drag on for a while.. I think roughly 5 to 10 minutes. I might possibly be wrong tho
