Sex refers to biological traits, while gender is a socially constructed concept.
Sex typically refers to biological differences like chromosomes (XX, XY, things like that…), hormones, and reproductive organs, often classified as "male" or "female"; Gender -on the other hand- encompasses socially constructed roles, behaviors, expressions, and identities.
That's why you can change your gender but not your sex.

While you have sex right gender is not. gender is actually used to describe words. the three genders are masculine, feminine, and neutral, e.g. man, woman, tree. languages like English, German, or Latin have the gender implied, while languages like Spanish or french have the el or la separate of the word. so you are on the right track but not entirely.

You're referring to the genders in romance languages, not people's genders.
