It's just easier overall

As a switch player, I obsessively protect my Joy-Cons to avoid this exact scenario.

I do wonder why you can't play Undertale with one joy con because you really can just use one if you think of the controls

It just might not have been seen as a priority in development of the switch version given that it's a single player game.
