Technically Winter defeated Darkstalker.
Winter freed Foeslayer from the diamond trial cave and Foeslayer told Kinkajou that Darkstalker isn't immune to his own magic, thus giving Kinkajou the idea to use it against him. So, Winter is the true hero here
