I feel your pain. I rented Starfield for a bit and by the Gods it was utter pish. Buggy as all hell and unimaginably boring. I returned it early and got a refund.
Please, let TES VI be good.
(p.s. my best guess as too who canonically won the civil war is no one. The Thalmor want the war to last as long as possible and it makes the most sense gameplay wise so that half the playerbase doesn't feel left out. I'm guessing The Thalmor beat The Empire in the 2nd Great War as well as to render any decisions made pointless giving the player a whole new world to inhabit maybe hundreds of years post-TES V.)
