Ingredients
- 1 cup (230g) unsalted butter
- 2 1/4 cups (450g) granulated sugar
- 4 large eggs
- 1 1/4 cups (160g) all-purpose flour
- 1 cup (85g) unsweetened cocoa powder
- 1 teaspoon salt
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- 1 teaspoon espresso powder
- 1 cup (175g) chocolate chips (optional)
Instructions
1. **Preheat your oven** to 350°F (175°C). Grease a 9x13 inch baking pan or line it with parchment paper.
2. **Melt the butter** in a large saucepan over medium heat. Remove from heat and let cool slightly.
3. **Mix the sugar** into the melted butter until well combined.
4. **Add the eggs** one at a time, beating well after each addition. Stir in the vanilla extract.
5. **In a separate bowl,** whisk together the flour, cocoa powder, salt, and baking powder.
6. **Gradually add the dry ingredients** to the wet ingredients, mixing until just combined. Be careful not to overmix.
7. **Fold in the chocolate chips** if using.
8. **Pour the batter** into the prepared baking pan and spread it evenly.
9. **Bake** for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
10. **Cool completely** in the pan on a wire rack before cutting into squares.
