From the reboot, at the beginning, you can tell he is NOT a calm man, he just builds it up, but over the course of the 2 games, he learns to be more than a God of War, he learns to be a father, to be merciful, he sees the cycle of sons killing their fathers, and he wanted to stop the cycle of that, which led him to killing Baldur before he could kill his mother
