Sonic's speed is very randomized. In the movie it's shown as 300 mph. But he also goes for 3400 mph in SA and 2400 in Unleashed!

Don't forget that in Sonic 2 and Sonic 3&K, Eggman was able to outrun Sonic

Sonic was holding back cause he didn't wanna turn Eggman into an ommelet.

I think it was to extend the player’s fun and the length of the game
