There's a mod about this but let's be honest, emeralds NEED another use besides trading them with villagers

I think they should give copper a non-cosmetic use first

What can you use copper for in the trial chambers?

Redstone armor: activates redstone and 2x speed in the rain

Emerald armor: makes trades better and Iron Golems don't attack you at all

Amethyst armor: makes overworld mobs not attack you at all, especially helpful agents the warden

Copper armor: can summon lightning and quadruples ores when mined with lightning

Coal armor: smelts them 2 times faster than a blast furnace, and no fuel is required

Lapis armor: gives better enchantments and makes it so you don't need lapis in the enchanting tale

Nether quartz armor: gives double XP when blocks are mined and nether mobs won't attack

Ender armor ((made up ore for the end)) make you teleport and end mobs don't attack you

Second idea: new armor piece called gloves.

I created an use for rubies if they would be added back

Sword: in the middle of the horizontal thing below the blade
Pickaxe: and the end of the handle (above the part for mining)
Axe: in the middle of the blade
Shovel: also.
Hoe: at the beggining of the blade

And armor:
Helmet: in the middle of the forehead
Chestplate: in the middle of the chest
Pants: uhh... On the knees? (It will somehow double)
Boots: in the middle of the shoe

They will have some special abilities, lime you could enchant them to like... Strength boost, speed boost, protection boost, range boost, and more, these enchants could be only for rubies, and probably 5 enchant levels on every.

It depends whether the trades are good. If for example it's something useless like 3 emeralds for a poisonous potato then it's not worth it.
