The shutter speed must be slow, as the bird seems to be shifting/ghosting. Increasing shutter speed (on phone/some cameras) will help reduce this effect.

Nah, the reason for that is because some iPhones just have really bad quality, especially in low light, which is what this was taken in. iOS adds a lot of digital artifacts to the image to try and “save” it. But instead of saving the photo, it ends up looking like a bad and messy watercolor painting.

Xiaomi, Samsung and Huawei(and OnePlus) really got your back where it comes to cameras, but I personally prefer to use a traditional camera, it's much better. Ik mine IS old, but it's somehow capable of 4K, and its picture quality is not bad, to say the least. Also, I found out that low-res (for a photographer) quality like 720p and 1080p actually work quite well, if in the right conditions, like nothing in focus.

And yes, I am aware that iOS does indeed use its software to patch up its mistakes. I say I can't blame it, though as a phone's camera typically is very small, leading to its sensor being small as well. The bigger a camera's sensor, the better.
