In my rewritten version of the Smurfs, Smurf essence actually isn't used for much. Gargamel doesn't want their magic or to eat them. He wants to stop them from kidnapping certain people for no good reason. And the Smurfs want to kidnap, torture, and execute Gargamel simply for being different than most of his kind.
