Ok, yes and no. Depends on the timeline. Are we following child timeline? OoT splits into three timelines. Child, Adult, and Fallen. Child is when Link stays a kid, Adult is when Link stays an adult, and Fallen is when Link dies at the final battle. Then again, BoTW is the convergence of all three, so it doesn't matter in the end. Sorry for TLoZ ranting.

In the Downfall timeline, he dies and therefore never rescued his princess. In the alternate timeline (which splits), he does defeat Ganondorf, rescue Zelda, etc etc, and her reward is to turn him back into a kid...

So it is technically true because his reward for saving his princess is to get turned into a kid...

But there is the adult timeline where Link stays an adult. Causing games like TP and AoL to take place

The Adult Timeline is where Link defeats Ganondorf and so then Zelda sends him back in time. So he leaves this timeline and goes to the Child Timeline. The Adult Timeline then continues on, with Ganondorf breaking the seal and Hyrule being flooded. Then Wind Waker happens, Ganondorf dies, then PH and ST happen and New Hyrule is founded.
Legends remain of the Hero of Time, but no one ever knows why he left and didn't come back.
