When we see objects, that is light bouncing into our eyes, and the amount of light is perceived as the brightness of the light source. But in space, there isn't anything for light to bounce off of, so we perceive it as dark, despite it being very bright due to lack of atmospheric interference. This is like saying that a room is dark because it is painted black.
