There’s a whole study analyzing this
Basically, most of the laws in Leviticus only apply to Jews, because they would be nullified when the Messiah came. Jews don’t believe Jesus was the Messiah, so Leviticus still applies for them.
Most chapters in Leviticus begin with God saying something like, “Speak to the entire assembly of Israel and say to them: ‘Be holy because I, the Lord your God, am holy.” This therefore states that the following laws only apply to Israel, and Jesus later fulfilled these.
However, Leviticus 18 begins instead with, “You must not do as they do in Egypt, where you used to live, and you must not do as they do in the land of Canaan, where I am bringing you. Do not follow their practices.” Implying that these rules are meant for all of humanity rather than solely Israel.
