I headcanon him as a trans man. if you look at his ghost house, it is very feminine, so that's why I like the ftm thing. at the very least, all the other ghosts we know of are agender, so he could just be agender-to-male.

Frisk is canonically nonbinary, Alphys was shown to have a crush on both undyne and asgore (so bi) undyne has only been seen to have a crush on alphys (maybe lesbian) papyrus and mettaton's come from evidence in the game, but nothing is really confirmed.
