i just did

Sith have eyes like this, expressing their total turn to the dark side. (I haven't really done the research) but dooku never had them. That's either poor cinematography (which it isn't, cause it was Lucas) or Dooku was never really a sith, just a sorta bad dude.

Dooku's eyes weren't yellow because he wasn't motivated by anger. He was merely a practical Sith, making him exempt from the yellow eye feature.
