George Lucas has already detailed where various parts of OG Star Wars drew inspiration from.
The Trench Run was inspired by the Dam Busters.

It can be said that OG Star Wars was not sloely inspired by WWII, but to say no inspiration is just denying reality.

P.s. Disney Star Wars is not Canon :P
