There are two: sex and gender. I don’t remember who posted this (if someone reading this knows, please reply with credit) but there was a meme with Loki where he says “I don’t ‘identify as’ genderfluid, I AM genderfluid” because identifying as something means you are it and are publicly out. Gender is what you are. Sex is what’s in your pants and shirt/bra/binder. All three of these can change.

Apart from the already mentioned difference between sex and gender, intersex is not "the third sex".

Intersex is an umbrella term for anything that isn't either 100% biologically male or 100% biologically female and there are many ways to be intersex. In addition to there being many more possible combinations of chromosomes than just XY and XX, chromosomes aren't even the only determining factor. Hormones can sometimes just completely change a person's sex as determined by chromosomes or certain parts of it. And this occurs naturally as well and not just as a result of hormone treatment.

Basically, even biology doesn't have clear borders between the sexes and since the lines are so blurred scientists generally don't try to find a name for each and every possible combination they find (although the different chromosome patterns are usually named after the person who discovered them) and instead simply group it all together as intersex. But it is not just one thing.

sex is the biological one that has technically three because amab afab and intersex although intersex just means someone who's biological features don't fit with the general understanding of another sex so there's multiple ways to be it whereas gender is what you identify as that also does have some basis in a physical thing being the structure of the person in questions brain as well as the brains activity

i differentiate sex and gender entirely, i'll say my gender's non-binary and then proceed to not talk much about my biological sex
Yeah, gender's personal identification, but "biological gender" is biological sex, because gender's more about what's in your brain
