shii cho- way of the sarlacc targets areas to strike and basic movement.
Makashi- prioritises defence mor ethat offence, created by the jedi.
Soresu-used to deflect blaster bolts and as a offencive weapon, used by obi-wan
Ataru- Uses of aggressive and persistent strikes to defeat opponent.
Shien-same as Ataru but with acrobatic movement.
Niman- this form is used if you have two sabers or a double bladed saber.
Juyo-this form is the most dangerous for the user, draws force from both sides of the force, light and dark, jedi that have been sith in the past often use this, along with mace windu

Yes sorsu is good for incoming fire/deflecting. But I would prefer form 5, (Shien/Djem So) because it focuses on deflecting the incoming fire back to your opponent which is obviously more effective.
