Well, there's one artist I could recommend to you, Clamavi de Profundis. They're more well known for their adaptations of JRR Tolkien's poetry to music, but they've made several Catholic songs in a more modern style, while retaining several key elements of Gregorian Chants.
I like those styles too. I actually listen to the aforementioned modern Catholic music on loop, and I enjoy singing some of the classic hymns in church.
