They just spawned in border blocks and encased the portal, then made a doorway cause doors block water and lit the portal, and then exited while quickly replacing the door with border blocks creating this illusion

Yes try pouring water out of a dispenser on to the nether portal and see the outcome

I've encounter that before but it has a chest full of gold and enchanted apples
