We'd die

Then everyone dies, because there is no more warmth for us to thrive in

At least I won't get sunburned, but I would freeze in winter

Yeah, but there is still wildlife and all that other stuff. If the sun dies, then the wildlife dies. Thus, no food, because of lack of resources, and no water, because all of the water in the world freezes.

Hence, human extinction

I call that "balance of life", if anything is out of the equation, then the balance is broken

And when the balance is broken, everything falls apart.

One by one

Everything will die if one of the balances are destroyed. That's why it's important to keep that balance.
