I like ranch, but eating it is a suicide mission for me. I have a strong lactose intolerance and ranch has a concentrate of lactose in it...it's essentially the worst thing I can consume, with regard to the lactose intolerance thing. Blue cheese is okay, in my book. I can only consume it in moderation, or as a background flavor. If used sparingly, it can make mac'n'cheese. You must be thinking, "why is this lactose intolerant guy eating mac'n'cheese?" Well, I eat it knowing I will have adverse effects. Good, homemade mac'n'cheese is one of my favorite dishes. If I use mainly aged cheeses, I don't react badly to it. The aged cheeses have less lactose due to enzymes breaking down that complex sugar over time. Dipping wings in these "sauces" is just plain wrong. I would like to ask those who subscribe to this practice, "Are you here to eat chicken or salad dressing?"
