I dunno. I usually like to judge things for what they are instead of what they aren't. Expecting an entry of a series to be a certain way can really kill the experience IMO.

But I feel like some parts were unnecessary, for example Canto Bight, which was just filler. It's one thing to not have something, but it has to be held by something as good, or better. Finn, one of the main characters, was wasted. We could've seen more about the First Order, and how Finn is still torn between the First Order, Resistance and living a neutral, quiet life in a more detailed, and focused way. But we got a pointless scene which served nothing. We don't know much more than the characters we got. Heck, even the character which was introduced, the code slicer guy, was wasted. I would've loved to see Finn play a major part, tying to his backstory in a more unique way. What they did on Canto Bight could be done by anyone else, really, and it wouldn't make much of a difference instead "they rescued some horses so yeah, worth it.".
And that admiral who replaced Leia for a bit wasn't needed. We could've had Ackbar, or a general who actual didn't make me cringe about "we have a plan, perhaps, but not really, perhaps, and if we had a plan, we still wouldn't tell or show you, perhaps.". That made no sense, whatsoever. At least she would've given a briefing on what to do. If she told everyone what will happen, it wouldn't have caused the mutiny, done by Po. It made no sense for her to hide the plan if it would only cause distress. And if she didn't have a plan, gather the officers and make a plan. But no, we got avoidable, pointless conflict.
One of the worst sins, if not the worst sin, the movie did was not do anything with Snoke. They tried so hard to not do what fan theories expected to where they didn't bother to explain Snoke. He ended up being pointless, and if, in the next movie, Snoke isn't explained, that would ruin the entire trilogy for me, though I would still kinda like Force Awakens, since Force Awakens is pretty cool, not gonna lie. But Last Jedi did nothing to show, or even tell about what Snoke is. Or who Snoke is? Or why? And this sort of goes for Rey, who is at this point very close to being, if not is a Mary Sue. She had little to no training and is able to lift up boulders without failure.
And I do kinda like what they did to Luke, I think him being in exile and jaded is a good idea, but his finale should've been better. I know I seem like a "fanservice or die" person but it wasted so much of what could've happened, which is why the movie fails. It replaces the extremely cool stuff which fans wanted with kinda cool stuff.

No offense, but I think the real problem is that you expected and wanted too much. In my opinion, going "I DON'T LIKE THIS MOVIE BECAUSE IT DIDN'T DO EXACTLY WHAT I WANTED" just seems... nonconstructive and childish.

Snoke was a Red Herring. He wasn't meant to have some complex backstory.

I honestly don't get the "Rey is a Mary Sue" argument. She had to survive by herself on Jakku for over a decade forcing herself to learn self-defense. You get what I'm saying? Also, she has flaws and she isn't automatically liked by all of the non-evil characters. Therefore, she is NOT a Mary Sue.

But Star Wars is meant to be extremely cool. Not lazy, and boring. I loved this movie, but now I loathe it. It didn't do what could've been done, and done better. It's not good. It has good parts. But the more I think back, the more I see its ugly flaws. Sure, it might be the internet fanboys, but I bet quite a few of them know what they talk about. Disney has so much material to work off of from Legends, as well as its own stuff.
I would borrow from Knights of the Old Republic, and if you played the game, I would tell you. I'm not being "I'm not gonna tell you cos you're sequel trash" but I want you to see and enjoy a really good game with no spoilers. I'll tell you if, or when you've finished. It's on steam, probably a sale right now, so yeah. #notsponsored.
But the Last Jedi, I cannot enjoy unironically nor ironically. It's too plot hole filled to be legitimately great, and too forced to be so bad it's good. The Prequel's dialog was wooden and didn't make sense, but I like it because of the memes and the insanity it is, and also some unironic stuff.
The Last Jedi is not good, in my opinion, I don't expect you to agree with me.

Have you ever considered giving it a second viewing? There are many people who at first hated the film (or just fealt unsure about it), but loved it after a second viewing.

Knights of the Old Republic? I guess I'll try it out eventually. But I currently have a crap PC that's running an OS that wasn't really made for gaming.

So, basically it will be me saying "I get that reference" for three movies, agreeing on everything good for two and two thirds of the movies, me wanting to kill ewoks for the one third, us enjoying the next movie, and me pointing out every single flaw in the last, and taking toilet breaks on a frequent basis.
