We all go deaf a little playing loud. Depending on the size of stage and venue, the amps are miked up, so they are actually listening on monitors infront of them, the volume stays the same and is controlled by a sound guy off stage. Adjusting the amp is purely for sound. Different amps create different sounds aswell. And the monitors are adjusted for what the player infront wants to hear, one guy may want more bass, less lead, more vocals, less tom toms, more kick and snare.
