I see two possibilities for the creation of all matter: Either some entity outside the constraints of matter created it, or the matter created itself. Both options are equally mind blowing. There is evidence, not proof, but evidence of key "supernatural" claims made in the Bible. If those events are possible, then a God who created everything could have the results look like what ever He wanted in whatever amount of time. Also, it is important to know that being a Christian does not require you to believe the literal reading of Genesis. As I stated in my previous comment, I understand why you have your objections and I too have bogged myself down with trying to find holes in the Bible instead of trying to drop my bias and see what truth the cumulative evidence leads me to.
