Tags shouldn't disappear, but when you type a tag make sure you press Enter and the tag turns into an actual tag with the colored background. Otherwise the tag is not created.

You can press the Enter key, or another way is to type the comma , which separates tags

Also you can't change the color of a tag, it is predefined for some, otherwise it show up as grey-ish background. Tags can help when people searching on internet. Do you know you can google your memes? "LeonGambetta memes" Google image search.
