Fun fact: salmonella doesn’t come from the yoke, it comes from the eggshell. That’s why you don’t eat raw eggs because parts of the shell may have gotten in. Cooking them prevents sickness.
Alternatively, you could wash the egg, but that dissolves the shell and spoils the inside, so that’s why they don’t do it.
