I'm not sure the one about Mexicans is accurate (I haven't seen memes against being Mexican do well here). But the others seem about right.
And why shouldn't memes like that be popular? One of the points of memes is to attack ideas that are wrong and present themselves seriously. It's one of the good things you can do for society with memes. (Note: I'm talking about attacking the ideas more than about attacking the people who hold them, obviously.)
